Hey Folks! I love breakfast foods. I could eat breakfast foods for lunch, dinner and late night snack. French toast is one of my favorite breakfast foods, but I have not had it in years! The last time I ate it was at a chain restaurant and it left me with brain fog. With my attempt to eat mostly plant based food I decided to try a vegan version of French toast replacing the egg with chia seeds! I use chia eggs for baking and pancakes so I figured it would work for French toast as well.
- 1 cup hemp seed milk
- 1/3 cup chia eggs
- three slices of whole wheat bread
- 1 tsp cinnamon
- 1 tsp vanilla extract
- granola for garnish
- maple syrup
As you can imagine, I made this version of French toast the same easy way I would make the “regular” version.

- Hemp seed milk is an amazing alternative to dairy milk packed with protein, omega fatty acids, minerals and vitamins.
- Cinnamon is a great tasting spice and can also help regulate blood sugar levels and ease nausea.
- Chia seeds are great for fiber, contain omega fatty acids, protein, vitamins and minerals. I can attest that it’s a great egg replacer and is known for weight loss.
Being a French toast lover my taste buds were on full alert for any distasteful characteristics. Let me tell you – with this recipe I found none! The hubby tore it up too! This was so simple to make!
