Chia French Toast

Hey Folks!  I love breakfast foods. I could eat  breakfast foods for lunch, dinner and late night snack.  French toast is one of my favorite breakfast foods,  but I have not had it in years! The last time I ate it was at a chain restaurant and it left me with brain fog.  With my attempt to eat mostly plant based food  I decided to try a vegan version of French toast replacing the egg with chia seeds!  I use chia eggs for baking and pancakes so I figured it would work for French toast as well.



  1. 1 cup hemp seed milk
  2. 1/3 cup chia eggs
  3. three slices of whole wheat bread
  4. 1 tsp cinnamon
  5. 1 tsp vanilla extract
  6. granola for garnish
  7. maple syrup


As you can imagine, I made this version of French toast the same easy way I would make the “regular” version.

1. Make the batter – mix all ingredients (excluding the granola and bread) in a bowl
2. Dip the bread in the batter (let it soak for 2 –  5 seconds)

3. Cook the battered bread in a hot pan until golden brown and firm
After cooking…see the chia seeds?
4. Finished product – garnished with granola (optional)

  2. Cinnamon is a great tasting spice and can also help regulate blood sugar levels and ease nausea.
  3. Chia seeds are great for fiber, contain omega fatty acids, protein, vitamins and minerals.  I can attest that it’s a great egg replacer and is known for weight loss.

Being a French toast lover my taste buds were on full alert for any distasteful characteristics.  Let me tell you – with this recipe I found none! The hubby tore it up too! This was so simple to make! I encourage you to get ready to make this vegan version of French toast this weekend or for the next family breakfast, I guarantee it will be a hit!
